Happy Thanksgiving week sweet friends! This is one of our family favorite recipes to have for a holiday morning, take to parties and have around for a quick bite when things get crazy (like when you want to skip breakfast Thanksgiving morning- keep that metabolism revved up and prevent the “binge” later.)
Paleo Pumpkin Spiced Muffins
(gluten, grain, refined-sugar, soy free)
1 cup almond butter
1 T pumpkin pie spice
½ cup pumpkin puree (fresh is so delicious, but not necessary- just make sure it’s not sweetened!)
1/3 cup raw honey
2 whole eggs
¼ tsp sea salt
½ tsp baking soda
Optional: 1/3 cup dark chocolate chips
Preheat oven to 350 F and line a standard muffin pan with paper cups
In a medium bowl combine all ingredients until well mixed, folding in chips last, if desired.
Distribute batter evenly to muffin cups
Bake 15-20 minutes until cakes start to crack on top
Allow to cool in pan. Store in airtight container in fridge up to a week. These also freeze well!

Quick question – there is no flour in this receipe – what is the “dry” ingredient?

Hi Paige. I know it seems crazy, but no dry ingredients needed for this one. They end up setting up quite well and are so moist! I hope you try them and like them as much as my family and clients do.
Ouch that 1 cup of almond butter was painful! It was almost my entire jar! I hope they are delicious and worth it cause just the almond butter alone cost me like 8 bucks to make these 🙂 I won’t be making these too much. In the overn now.
Oh I do understand!! The paleo recipes are certainly like that. Just think of how well your blood sugar will sustain and how filling (and delicious) these muffins are 🙂
