So I am not sure about the name of this delightful dish, but that’s what this tastes like to me! (If you make it, please let me know your thoughts!!!)

Easy Pancakes in a Bowl

Serves 1

1/2 cup gluten free oats

1 cup of your favorite dairy free milk

1 pastured egg 

1 cup blueberries (or fruit of choice)

1/2 tsp coconut oil

1-2 T ground flax or chia seed

dash of Pink Himalayan sea salt

A few drops dark liquid stevia or local honey to taste

Option: cacao nibs, bee pollen (as shown), goji berries, unsweetened shredded coconut

Combine all ingredients except egg and flax seed in a small sauce pan over high heat and stir well, bringing to a boil. Turn heat to low and add egg as shown below:

Let sit for about one minute and stir mixture well. Cook for another minute or two, until your desired consistency is reach. Remove from heat and add flax, stirring well. Transfer to bowl. Enjoy!!
