Mediterranean Collard Wrap

With Zucchini Hummus

Makes 4-servings

 Wrap

4 large collard leaves, washed & de-stemmed

2 avocados, pitted & sliced

¼ red onion, thinly sliced

2 cups fresh greens of your choice

 

Spicy Island Zucchini Hummus

 2 medium zucchini, chopped (2 cups)

¼ cup extra virgin olive oil

2 cloves garlic

¼ cup lemon juice

¾ teaspoon sea salt, or to taste

½ teaspoon ground cumin

1 teaspoon paprika

Dash cayenne

½ cup sesame seeds, soaked 4 hours, rinsed and drained

½ cup tahini

2 Tablespoons fresh oregano, diced

 1.  To make hummus, combine all ingredients, except the sesame seeds and tahini in a high speed blender and process until smooth. Add tahini and sesame seeds and   process until smooth.

2.  To make wraps, place a collard leaf on your cutting board and cut in half horizontally. This will give you two wraps which=one serving. Place approximately ½ cup of greens between the two wraps. Smooth over 2-3  tablespoons of hummus onto the greens, then place approximately ½ avocado, carrots and onion-leaving enough for the rest of the wraps.

3.  Roll the wrap and place on your plate with seam side down.

4.  Enjoy!
