Easy Gluten-Free Granola Recipe
Prep and cook time: 20-30 minutes
Makes about 3 cups
Ingredients
- 2 cups gluten-free rolled oats
- ½ cup slivered almonds and/or walnuts
- ½ cup shredded coconut
- ¼ cup coconut oil
- ¼ cup maple syrup
- 1 tsp Ceylon cinnamon
- 1-2 tsp vanilla extract
Directions
- Preheat oven to 350 degrees.
- Combine all ingredients in a large bowl.
- Spread mixture in a thin layer on a cookie sheet (I like to cover mine with parchment paper).
- Bake for 5 minutes, and then stir with a spatula.
- Bake another 5 minutes and stir again.
- Keep baking for about 15 minutes total until golden brown all over.
- Option to add 1/4 cup goji berries upon pulling granola out of the oven and stir.
- Eat immediately or cool for about 10 minutes prior to serving.

This looks like a great simple granola recipe. I love Ceylon cinnamon! The granola pan picture is not displaying. Would love to see it.
