Blueberry “Yogurt” Smoothie
½ cup fresh or frozen blueberries
meat of one young Thai coconut
Just enough young coconut water to blend (about 2 tbsps.)
squeeze lemon or lime
stevia to taste, if desired
Blend everything until smooth.
