I love summer. Especially this time of the year when it’s hot and the garden starts bringing in delicious tomatoes. They are just the best this time of the year, right? And those delicious summer tomatoes call for fresh salsa!! Enough said. Read on friends!
Ingredients:
4-5 fresh diced tomatoes or 1 big can of Eden organic whole tomatoes (drain the juice) and 2 small cans or 1 large can of Muir Glen fire roasted tomatoes
4-6 pods of fresh garlic (or as much as you like to add)
1 bunch of fresh chopped cilantro leaves
1 medium red onion
1 tablespoon of Tony’s Cachere’s Cajun seasoning or mix of red and black pepper
1 tablespoon of cumin
1 tsp celtic sea salt
1/3- 1/2 cup of lemon juice depending on size of your tomatoes (please use fresh squeezed lemons as lemon juice from a bottle just doesn’t taste right)
Add all ingredients to jar or dish of choice and mix well or blend and enjoy. As you know-it tastes better after a day in the fridge. Let it sit for at least 2-4 hours to marinate before serving.
Variations include:
-Add fresh jalapenos
-1 tsp red wine vinegar
