Yes, because sometimes you just have to have dessert for breakfast!!

Baked Oatmeal Breakfast Dessert

Serves 1

Ingredients:

1/2 cup gluten free oats

1/2 cup organic raspberries

1-2 T coconut butter

1 egg white or 1 tsp ener-G egg replacer or 1/4 cup unsweetened applesauce

1/4 cup favorite non-dairy milk (omit if using applesauce)

1 tsp chia seeds

1 scoop favorite protein powder (optional)

1-2 tsp vanilla

dash Celtic sea salt

sprinkle of  chocolate chips

Directions: 

Preheat oven to 375 degrees. Melt coconut butter in oven safe dish. Mix remaining ingredients. Bake for about 20 minutes. For a crispy top, broil for about 2 minutes at very end.

Note: when you mix all ingredients the oats should be lightly coated with liquid and you may need to add more liquid than suggested. However, you do not want a sludgy wet mixture or it will take about twice as long to bake (but still taste good- believe me I’ve done it!!)

My guests love this with a dollop of coconut whipped cream on top!
