It started a couple of weeks ago. The holidays were over, but I still wanted some comfort food. It seems to me my Dad made the best sloppy joes as a kid. This could become a family debate, as my Grandmother still makes a mean joe in which she adds gumbo soup to the mix, but that’s another post 😉 And I don’t know about you, but I find ground turkey a bit boring (and sometimes dry) so I wanted to remedy that with my childhood food fix in a healthy way. Here’s what I came up with. I hope you love it!!
Not Your Momma’s Sloppy Joes
Prep: 10 minutes
Total Time: 30 minutes
Serves: 4
Ingredients
- 1 tsp coconut oil
- 4 carrots coarsely grated (2 cups)
- 1 medium onion, diced
- 1 garlic clove, minced
- 3 T tomato paste
- 3/4 pound organic ground turkey
- 28 oz crushed tomatoes (jar or canned)
- 1 T coconut sugar
- 1 T apple cider vinegar
- 1 tsp coconut aminos
Directions
1. In a large skillet, heat oil over medium; add carrots, onion, and garlic. Season with salt and pepper. Cook, stirring occasionally, until softened, 4-5 minutes.
2. Add tomato paste and cook for about 1 minute while stirring. Add turkey; cook, breaking up meat with a spoon, until no longer pink, 4 to 5 minutes.
3. Add tomatoes, sugar, vinegar, and coconut aminos. Cook, stirring occasionally, until thickened, 12 to 14 minutes. Serve on sprouted bread, over brown rice or in a paleo wrap.
Time Saving Tip: use your Blendtec to gate the carrots (I mean who has time to grate carrots anyway?) This works for onions too! And smash that garlic with a spoon and be done with it.
