I love brownies. But I don’t always love gluten-free brownies. That said, my family and friends taste-tested a lot of brownies until we got this one right. Below is the winner.

We love this recipe because it’s protein-rich with healthy fats, so they make a nice snack, not just sugar-laden dessert. The raw cacao also gives that perfect rich chocolatey flavor necessary for the perfect brownie. Enjoy these tasty gluten-free brownies

Flourless Chocolate Brownies

Prep and cook time: 45 minutes
Makes 16 2-inch brownies

Ingredients

  • 1 (15-ounce) can no-salt-added black beans, drained and rinsed
  • 3 large pastured eggs (ener-G egg replacers work well too!)
  • 1/3 cup melted ghee, grass-fed butter or coconut oil  + more for the baking dish
  • 1/4 cup raw cacao powder
  • 1/8 teaspoon salt
  • 2 teaspoons alcohol-free vanilla extract
  • 1/2 cup coconut sugar
  • 1/2 cup gluten-free semi-sweet chocolate chips
  • 1/3 cup finely chopped walnuts

Directions

  1. Preheat the oven to 350 degrees.
  2. Butter an 8-inch baking pan.
  3. Place the black beans, eggs, melted butter, cocoa powder, salt, vanilla extract, and sugar in the bowl of a food processor and blend until smooth.
  4. Remove the blade and gently stir in the chocolate chips and walnuts.
  5. Transfer mixture to the prepared pan.
  6. Bake the brownies for 30 to 35 minutes or until just set in the center.
  7. Cool before cutting into squares.
  8. Optional: Top with easy coconut whip cream (as pictured.)

Notes:

  • I like Eden Organic beans because they soak and cook them in kombu, making them more digestible and nutrient-rich.
  • Until my gut was healed, I used ener-g egg replacers and they worked well. You can use gelatin, but it’s hard to digest, so I recommending proceeding with caution.
  • I’ve made these sugar-free by using 1/3 cup xylitol and 1/2 tsp dark liquid stevia in place of the coconut sugar. They came out well, but for some, xylitol can be hard on the gut, so I recommend making sure your eaters can tolerate the xylitol or only doing brownie bites if you use this method.
