I love Mexican food, but it sure is hard to find clean Mexican food. These days when we are craving it, we just make it at home. As much as I love our typical Mexican food night, I was feeling a bit bored with the usual. Enter this healthy, gluten free Chorizo Stuffed Sweet Potato Recipe (Paleo option.)

What is Chorizo? 

It’s sausage and it’s delicious. It can be ground or in links. Mexican chorizo is typically raw and Spanish smoked.

Where to buy chorizo?

I buy my chorizo from a local butcher that carries chorizo from pasture raised pigs.

Why is chorizo so greasy?

It took me awhile to find great chorizo. But once I found a high quality supplier, I had no more greasy chorizo. In fact, it also wasn’t red, which I figured a good thing as it’s likely a food dye I wouldn’t want to be feeding my family.

Ok, now the recipe…

I wanted this recipe to be filling, nourishing and loaded with vegetables. The goal was to create something super simple to make that would be just as tasty as a Mexican restaurant. Even though I am not into any specific food rules, I have been desiring lighter fare with less starch in the evening. My husband however eats like a dinosaur, so I am always working to find a happy medium.

I popped the potatoes in the oven while the baby napped….

Grabbed the vegetables I had on hand….

And now for the chorizo stuffed sweet potato recipe…

Chorizo Stuffed Sweet Potato Recipe (gluten-free, Paleo option)

Ingredients:

4 well scrubbed and baked sweet potatoes

1 pound chorizo

1/2 medium onion, diced

1 bell pepper, diced

2 cups greens of choice (kale, spinach, collards, etc.) torn

Option to add 1/4 cup each of any other desired vegetables (carrots, zucchini, etc.)

1 box/2 cups black beans(leave out if making Paleo)

1 tsp cumin

1 tsp oregano or 1 drop oregano vitality essential oil

1-2 cloves garlic, pressed

Salt and pepper to taste

Optional toppings:

  • chopped cilantro
  • sliced avocado
  • salsa
  • jalapeno
  • plain yogurt (as sour cream)
  • squeeze of lime

Directions:

  1. Scrub and bake sweet potatoes. I poke holes in mine and bake at 425 on a sheet lined with parchment paper for 45 minutes, turning halfway through.
  2. Heat skillet over medium heat. Add onion, garlic, peppers, any other desired vegetables, and spices.
  3. Next add chorizo and allow to cook about 5 minutes.
  4. After that, begin to break up the meat and stir veggies. Add beans and greens.
  5. Stir every 2 minutes until thoroughly cooked (see note.)
  6. Slice the sweet potatoes lengthwise down the center and push the ends towards the middle so it opens up. Stuff the sweet potatoes generously with the contents of your skillet.
  7. Any desired toppings and enjoy!

Notes:

If your chorizo is not greasy, this will all cook well in one pan and need no straining. If your chorizo is greasy (or you’re not sure) I recommend cooking separately from vegetables, straining and then combining and adding spices.
