I hope you’re loving the quinoa series! I have had a blast writing it for you guys and testing all the food. It was really hard to decide on a unique recipe to share. I figured since quinoa is fairly easy to pair with protein and veggies for dinner, I would share a recipe to help make breakfast simple, hence the blog name Real Nutritious Living 😉 Read on to get your 5-minute Easy Quinoa Breakfast Bowl Recipe…

This is a recipe we’ve made on and off for years now. When my husband went back to school in a small town in Indiana, our favorite getaway was Chicago. We loved indulging in the arts and all the delicious food!

We came across a spot called Protein Bar. They had juices, smoothies, scrambles, and bowls similar to oatmeal but made with quinoa. Naturally, it was a must-try! We really loved them, and once we got home we’d make them with our quinoa that was leftover from prepping meals for the week.

Alright, now for your tasty recipe…

Easy Quinoa Breakfast Bowl Recipe

Ingredients

  • 1 cup leftover sprouted quinoa
  • ½ cup fruit of choice (or pumpkin puree)
  • ½ cup nondairy unsweetened milk
  • 1-2 T raw nuts or nut butter
  • 1-2 tsp maple syrup
  • Cinnamon, nutmeg, and/or cardamom, to taste
  • Option to add 1 T collagen

Directions

  1. Warm the cooked quinoa in a small saucepan with a little nondairy milk (or, if cooking from the start, add the nondairy milk once the quinoa is done). When most of the nondairy milk has been absorbed, transfer to a bowl.
  2. Stir in sweetener and spice to taste.
  3. Top with fruit of your choice, followed by nuts and collagen. Serve at once.
  4. You can also combine all ingredients and put in your toaster (or regular) oven at 350 while getting ready for work. It’ll be ready by the time you’re all pretty. You may need to add just another splash of milk.
