I have an obsession with cookies. To be honest, there’s rarely a week that goes by at our house when we don’t whip up a batch. Of course, we are subbing out the junky ingredients, like white flour, sugar, and more sugar, for healthy fats and protein-rich ingredients that keep us feeling great. That’s where these Chocolate Chip No Bake Almond Butter Bites come in…

This chocolate chip no-bake recipe was actually inspired on a Sunday while doing meal prep. I really wanted cookies, but my oven was full. I also really wanted something that would pair well with my bulletproof coffee.

Why these chocolate chip no-bake bites?

Easy. My oven was full. It was Sunday and I wanted cookies. More like the masses were demanding them, as any parent can relate.

Why these ingredients?

Oats: Although I am not a huge grain eater, oats a few times weekly have supported my milk production. Data show oats support milk production for a few reasons. They’re a great source of iron, which is associated with low supply. They’re also a calming comfort food, which may help with the release of oxytocin (relaxation) and boost supply.

Almond butter: A great source of protein and B vitamins, which help with energy and mood stabilization, as well as calming magnesium (again all great for milk supply!).

Maple Syrup: This lower glycemic sweetener also contains vitamins and minerals, as well as antioxidants.

Coconut oil: Boosts metabolism, accelerates weight loss, keeps our heart healthy, and boosts the immune system and our thyroid.

I adore being sneaky… and I’ve found by using a combination of maple syrup and coconut oil in my dessert recipes, I can decrease sugar content by 1/2- 2/3. Although it’s important to swap out sugar for healthier substitutes, it’s also really important we’re dramatically decreasing how much of it we’re consuming (more on that here).

Chocolate Chip No Bake Almond Butter Bites Recipe

Prep time: 10 minutes
Cool time:15 minutes
Yield: 12-16

Ingredients

Directions

1. Mix all wet ingredients in a medium bowl.
2. Slowly mix in oats (and coconut, if using) and chocolate chips. The batter will be sticky, but not wet.

3. Roll into balls and drop on to parchment paper on a baking sheet or another flat surface that you can stick in your fridge.

4. Allow to cool at least 15 minutes to set your balls.
5. Enjoy!

Notes:

When rolling your balls, you will have to give them a little muscle, kind of like playdoh, to get them nice and tight. If you feel like your dough is a bit dry, add another tablespoon of coconut oil. You can also moisten your hands to help roll into balls.

I recommend storing these in the fridge.

  1. Oh these have all my favorite things! My kiddos will love them too (and making them). Great tips on reducing sugar intake too. I always remind my kids that natural options like maple syrup are still sugar and we can’t go overboard with them.

    1. Thanks Dawn! Yes, it’s so important to get some the sugar out. Even in ‘healthy’ treats, there is still way too much!
