Snacks have always been a challenge for me. Especially this week when we were moving and I was short on both time and creativity.  One of my favorite healthy gal pals posted this healthy goji berry brownie ball recipe on Instagram and was also kind enough to share it.  It’s the perfect recipe for on the go, filling, it contains chocolate and is super easy to make! 

It seems we’ve been on a superfood kick this spring! See this post for my top 10 favorite superfood add ins, 2 of which are included in the recipe below.

Goji Berry Brownie Ball Recipe

Ingredients

  • 1/2 cup walnuts
  • 1/2 cup cashews
  • 1/2 cup cacao powder
  • 1/4 cup cacao nibs (optional)
  • 1/4 cup dried goji berries (soaked in hot water for a few mins and drained – to soften)
  • 5 large pitted dates (also soaked and drained)
  • 2 heaping tbsp melted coconut oil
  • Splash of water (if needed – to bind)

Directions

1. Add all ingredients to food processor and pulse until a sticky dough forms.
2. Roll into 1-inch balls on nonstick parchment paper.
3. Add additional goji berries to the top.
4. Place in freezer for about 30-45 mins to harden.
5. Enjoy (repeatedly)!

Can be stored in an air-tight container in the fridge for about 1-2 weeks or in the freezer for up to 1 month.
