Easy Gluten Free Granola Recipe
Prep and cook time: 20-30 minutes Makes about 3 cups
2 cups gluten-free rolled oats
½ cup slivered almonds and/or walnuts
½ cup shredded coconut
¼ cup coconut oil
¼ cup maple syrup
1 tsp Ceylon cinnamon
1-2 tsp vanilla
Preheat oven to 350 degrees. Combine all ingredients into a large bowl. Spread mixture in a thin layer on a cookie sheet (I like to cover mine with parchment paper). Bake for 5 minutes and then stir with a spatula. Bake another 5 minutes and stir again. Keep baking for about 15 minutes total until golden-brown all over. Option to add 1/4 cup goji berries upon pulling granola out of the oven and stir. Eat immediately or cool for about 10 minutes prior to serving.
